As assault bring lots of smoke. You can shoot chopper pilots out if you aim well enough.

Not much as assault. Smoke / flares if they have FLIR zoom. Revive the engineers, and spot the heli so you pilots always know where they are at.
Possibly grenade launcher but it would be a tough shot and not 1 shot kill

Though if ur talking about attack heli, you're kinda shit out of luck in 99% of scenarios as assault and you need to just play around them. Pay attention to where they're at and check your map (looking at big map really helps), try not to be caught in the open while theyre passing by
