Day to day life of M365 admin

So I got a new job m365 admin/it admin and I have no idea what to do as m365 admin. I get random tickets to update contact here, assign a group there, assign license here, off board that guy over there, some random issue, and other stuff. But besides this, what else do m365 admins do? Like what is your day to day activities and checks?

Coming from generalist position it feels really weird as I have way less responsibilities ATM ( famous last words ).

The ticket treadmill is only part of the job. Real work happens quietly: reviewing sign in logs, checking admin roles, auditing guest access, and testing conditional access policies. That’s where you find problems before they find you.

Mostly you'll be playing a daily round of 'Hunt the feature'.
That menu that you've used previously will suddenly disappear and you'll have to spend hours trying to find how to do something that took you seconds a few days ago.
Learn powershell. It'll save you hours!

It's really surprising I hear both "I have this much experience and can't find any job" & "I have no idea how to do my job" at the same time. Something doesn't add up.
