What i particularly struggle with is chaining rocket jumps, hitting airborne enemies as soldier and playing Demoman in general.

Are there any community servers you guys could direct me to where i could learn to play better in an actual match setting?

If you guys have any tips that helped u while u were a newbie like me I'd appreciate it if u could pass down the knowledge to me :p

There are jump maps to practice jumping on, start with junp academy

As for general dm skills, i wanna say mge, but also you might get stomped over and over again and not have fun and also probably not learn much, dm servers are probably better for learning imo

Hitting airbone enemies as soldier is hard and doesn't happen enough in pubs where you need to particularly practice it.

For Demo the biggest skills is knowing how to utilize all 12 explosives you have fully. If you are only using the sticky bomb launcher or only using the grenade launcher (assuming stock loadout) you are not playing him to his full ability. Getting good at hitting pipes will massively increase your ability on Demoman, pipes do absolutely insane amounts of damage per hit.

Sticky bomb launcher takes practice but is easy enough to use to where Iwould say experience will make you better. When laying down stickies think about where the enemy wants to go and how you want to control it. Lay down some stickies to funnel your target, switch to your pipe, launch some, and then detonate the sticky bombs when they arm. This basic combo works for me in about 99% of DMS.

Soldiers and demos bomb you exactly because it's difficult to hit them if they airstrafe correctly, don't worry too much about that. Nobody can airshot good soldiers and demos consistently, some people are better at it than others but everyone essentially just tries to put themselves in a position where they can get lucky. Sometimes you just die, it is what it is. Other than that, specifically for soldier, try some jump maps to learn how to chain rockets. On demo in casual, you don't really need to know how to chain stickies together, you just need to stay alive.

Populated MGE servers will likely either give you help, or tell you get to get in a match and crush you endlessly, but that is it's own lesson.

IF you wanna get better at rocket jumping, Jump academy is your best bet. Practice make perfect with playing demo, so just keep at it with using the grenade launcher, practicing against scouts that are jumppy and wiggley also helps a ton.

Learning the speed of rockets and the arch of grenades will also help a ton.

Be sure to use viewmodel min mode and have your fov at 90!

Getting good at air shots is nice but most people in pubs don't surf rockets or rocket jump, so I'd focus more on looking for opportunities to practice landing upwards directs. If someone has highground on you instead of jumping up them, just try hitting them in the chest with your rockets.

Jump academy is a great place to start with improving rocket jumps. The people there are very supportive of new jumpers seeking improvement.
There's also tr_walkway_rc2 if you want to get familiar with leading rockets, hitscan while moving around, etc (make sure to enable 'sv_allow_server_point_command always' in the console BEFORE making the offline server).
MGE I would be careful because you can observe good players and what they do, but getting continually stomped without any constructive criticism will lead nowhere. And it's not uncommon to see sweaty MGE lords mock you instead of being supportive.
Also pick your fights. If you don't have particularly good movement, don't 1v1 a heavy. Don't charge a sniper head-on as soldier, demoman, or any relatively slow class unless the sniper really sucks. Read the flow of the game and you'll die less.
