What are your genuinely cheap slow cooker meals that still taste good on day five?

My weeks look like this: open at the coffee shop at 5am, come home to a dog that needs a solid hour of training and enrichment before she'll settle, and then I have approximately zero energy left to cook anything that requires standing at a stove. So the slow cooker has basically become the only reason I eat real food Monday through Friday.

The thing I keep running into is that I'm trying to do this on a pretty tight budget and I can never figure out the right ratio of dried beans to everything else without the whole thing turning into either soup or paste. Last week's white bean and kale situation was not great. The beans were somehow both mushy and underdone at the same time, which I didn't know was possible.

I do chicken stock from scratch pretty regularly and that helps stretch things. I just dump it in as the base for almost everything. But I feel like I'm circling the same four or five meals and I want to branch out without buying a bunch of ingredients that don't make sense on a barista's paycheck.

What are you all making that's genuinely cheap, like dried beans and cheap cuts cheap, and actually holds up through the week without tasting like sadness by day three.

Made this last weekend. Finished eating it last night:
2 Tbsp chili powder* ($0.60)

1 15oz. can diced tomatoes ($0.79)

1 15oz. can tomato sauce ($0.88)

1 15oz. can kidney beans ($0.89)

1 15oz. can black beans ($1.15)

1 15oz. can pinto beans ($1.49)

1 cup frozen corn kernels ($0.44)

2 cups vegetable broth ($0.26)

2 cups uncooked macaroni noodles
($0.50)

1 cup shredded sharp cheddar ($1.25)

Any chuck, leg, chicken. Into the slow cooker, canned tomatoes, herbs, stock, spices...

Easiest when I'm super lazy is chilli.

I never brown my meat.. not enough time.. everything in. Set. Forget. Eat

Can you spend one weekend cooking multiple recipes, portion them out, freeze them, and then rotate through? Once you have a good stock in the freezer, you only need to cook one recipe every so often, and by freezing them you have variety rather than the same thing multiple days in a row.

1 pork shoulder. Fill half way up the shoulder with dr pepper. Cook on low. Shred then add salt to taste.

Pair with steamer vege bag and steamer rice bags put into a separate container from the meat.
